Red Quinoa, Black Bean & Bell Pepper Salad Recipe for Tasty Kitchen

If you have already made it through the list of New Year’s Recipe for Good Health and are looking for more low-fat entrees or side dishes for Meatless Monday or any other busy weeknight, this is the recipe for you. This dish can be made with either the regular (light tan-colored) or red quinoa. It is packed with healthy protein, fiber, and fresh vegetables, and tossed with a tangy lime-cumin dressing. I wish I could claim this recipe as my own, but it came from the kitchen of talented blogger Kay Heritage, otherwise known as The Church Cook.

I really love this power grain and I like your recipe as well.
