Chicken Spinach Salad Recipe with Warm Bacon-Artichoke Dressing

What the heck is a girl from Canada doing in a place where the thermometer creeps up into the hundreds on the hottest of summer days? This is the time of year when I take full control of the air-conditioner and threaten anyone that dares to turn it off or even nudge it upwards one notch. It’s not a pretty sight. Naturally, I do anything in my power to stop the heat from rising, including turning on the oven. That’s where light meals like this chicken and spinach salad come into play. With a drizzle of warm bacon and artichoke dressing, it feels as though you are eating something decadent – minus the “slaving over the stove” part.
