Grilled Mushroom Sliders with Zucchini & Cilantro Almond Pesto Recipe

When we were on our two-week summer vacation, several blogging friends kindly stepped in to share their talents with you. The first post came from Amanda of The Cilantropist, who “wow”-ed everyone with her tempting Orange Cantaloupe Sorbet recipe, and brilliant styling and photos. Well, now it’s my turn to return the favor with these Grilled Mushroom Sliders with Zucchini and Cilantro Almond Pesto.

As much as I enjoy a hearty beef slider, such as Smoky Burger Sliders with Grilled Pineapple & Chipotle Mayonnaise, sometimes I crave something a little lighter. This satisfying meal stands in well as a vegetarian option for Meatless Monday or any other day of the week. Paired with a slightly spicy pesto of cilantro, almonds and jalapeno, the juicy mushrooms and zucchini burst with flavor.

Heading over now. I have to admit, we don’t eat nearly enough vegetarian food. When I first looked at the first photo, it almost looks like a piece of beef peeking through the burger buns! Happy Monday Dara.
