Roasted Chicken Soup with Gnocchi & Pesto Recipe

I don’t know about you, but when I see the word “zuppa”, I can practically smell the flavors of a rich broth and feel my skin tingling as I imagine the warming liquid sliding into my belly. Of course, this comforting soup, filled with roasted chicken, pillowy gnocchi and savory pesto, would be served by my long-lost Italian grandmother, next to a roaring fire, with the sound of Pavarotti carressing the notes of my favorite aria. Sigh…Okay, I don’t actually have an Italian grandmother, long-lost or otherwise, but I could probably conjure up at least a flickering fire and a Pavarotti aria or two.

This sounds great, and looks even better. I can’t decide which looks more appetizing, the big pieces of chicken, or that savory looking broth!

Oh my gosh…I love gnocchi. It’s just so chewy and delicious, not to mention I am a potato freak. xDDD Unfortunately I rarely get it ‘cuz my dad doesn’t like it. WEIRDO.
