Chipotle Shrimp Salad Bowls Recipe with Avocado, Black Beans & Corn

Bring on the smoky heat! These hearty salad bowls are filled with plenty of healthy ingredients…avocado, black beans, corn brown rice, romaine lettuce and some shrimp that will have you reaching for the nearest bottle of cold lager. In this hot weather, we are fixing main dish salads for lunch and dinner. A couple of our favorites are Grilled Flank Steak Salad with Smoked Paprika Dressing and Salad Cups with Quinoa, Shrimp, Avocado & Lemon Dressing. This one will certainly be added to the list.

However, be warned, this salad is not for the faint of heart. If you are not a heat-seeking missile, I suggest veering away towards something a little tamer. Alternatively, you could do a light rub on the shrimp…ancho chile powder, cumin, salt and pepper.

OMG(*^%$# That is a gorgeous dish – but, I know those chipotles and I would be a dead duck to have that much heat in a dish. One half of one would be all my family could handle – but that would still be delicious. I had no idea that people could really eat that much heat in a dish!

I made this last night. It was nice and hearty and I loved that the “sauce/marinade” was just an easy one step. But holy cow it was HOT! If shrimp was cheaper I would have just pushed them to the side. I was thinking the chipotle might be good as part of a dressing though because it does have good flavor, it was just too intense on its own.

Thank you for recipe, always trying to find lower carb dinners.

made this last week with my boyfriend….it was AWESOMEEEE! we absolutely loved it and had some leftovers for lunch the next day too ;) used homemade guac instead of avocado slices (just bc im a sucker for guac! haha)–thanks!!!
