My Favorites: California Avocado 4th of July Blast Link-Up

It is the height of avocado season, and Kristen (of Dine and Dish) and I asked you to share your favorite recipes for our California Avocados 4th of July Blast. Did you ever come through with flying colors! There were smoothies and soups, salads and avocado fries. You made the most of the creamy, green fruit and it was very tough to narrow the field down to my three favorites.

Before jumping to the featured recipes, there’s a small order of business…one that involves some amazing prizes. I took all of your linked-up recipes and comments and threw them into a random number generator to choose the giveaway winners. Here are the results:

While there were so many fantastic recipes entered into the link-up, there were a few that really grabbed my attention.

Heidi of Foodiecrush entered a fresh take on guacamole, pairing mashed avocados and jalapenos with orange juice and smoked paprika.

Donna of Apron Strings takes one of my favorite pairings of avocado and shrimp and stacks them into a salad that is not only pretty to look at, but is bound to be tasty.

Betsy of BetsyLife takes a traditional Argentinian sauce and fresh avocado, and pairs them together in an original take on bruschetta.

AVOCADOS!!! My #1 favorite thing! So velvety! So rich! I grew up in Southern California + moving to Vancouver – what do I do???!!!! Avocados just aren’t the same up here!!!!!!!! I used to eat an avocado every day!
