I fancy myself as a hardy sort of gal. You know, going for more than a day without my favorite sparkling water or only packing four pairs of shoes for a vacation. Tough girl, right? Yeah, yeah...just kidding. Truth be told, I'm more likely to run an extra mile in the rain just to feel like a kid for a few more minutes, than to run home at the slightest hint of a drizzle. After all, I did grow up in Vancouver. The city didn't get lush and green by sporting endless sunny days and warm temperatures.
So, when fall hits and rain threatens, you'll still find me standing at the grill. Of course, an umbrella will be involved. No self-respecting Vancouverite is ever found sans umbrella.
These grilled shrimp are well worth getting rained on for. The sauce is a sweet, spicy and tangy mix of orange marmalade, molasses, fresh lime juice and cayenne pepper. Simply whisk together the sauce, baste the shrimp on skewers and quickly grill it over a hot flame for a couple of minutes. You can serve them as appetizers or on top of brown rice, accompanied by a side of stir-fried vegetables for a quick meal.
