This was tough! At the beginning of the week, I posted How to: Freeze Quinoa and asked you to link up your favorite quinoa recipes. Then it was my job to pick my five favorite submissions. Did I think that was going to be easy? Ha! Every single one of the recipes you submitted made me say, “Ooo, I want to try that.” Be sure to check them out.

So, I took a different approach.

Instead of just choosing the ones that I thought would taste good – because, really, they all fit into that category – I decided to show you recipes that highlight the versatility of quinoa. From breakfast to dessert, this ancient grain can do it all. Let’s get down to it.

Quinoa Recipe Round-Up

Okay, so there are seven recipes here. I just couldn’t narrow it down to five!

Kick off the day with this Heart Healthy Quinoa Granola by Carla’s Confections. Just add a little milk and fresh fruit, and you have a protein and fiber-packed breakfast.

Quinoa-Chocolate-Cake
I’ll bet that dessert is not the first thing that pops into your mind when you think of quinoa. Head to Within the Kitchen for this beautiful Quinoa Chocolate Cake.

Red-Quinoa-Beet-Salad
The vibrant colors of red quinoa and fresh beets in The Perfect Pantry’s Red Quinoa, Beet & Pecan Salad with Pomegranate-Orange Vinaigrette are not only eye-catching, but hint at the vitamins and minerals tucked away in this flavorful salad.

Quinoa-Crusted-Chicken-recipe-taste-and-tell
I’ve made a lot of quinoa dishes in my day, but I’ve never thought to use the tiny grain to coat chicken. Deborah of Taste and Tell show us how to do it with her Quinoa Crusted Chicken with Skinny Honey Mustard.

Quinoa-Arancini
Typically made with leftover risotto, Donna and Anne of Apron Strings put their own spin on arancini with these Quinoa Arancini with Easy Aioli.

Quinoa-Crumble-Bars
These No-Bake Quinoa Crumble Bars by Half Baked Harvest are exactly the sort of healthy snacks that I like to slip into my boys’ lunch boxes. Of course, the chocolate chips distract kids from the fact that there are flaxseeds and quinoa in these bars.

Love the variety of recipes here! I had some amazing quinoa brownies the other day, so I’m thinking I might try that lovely chocolate cake up there…

I am using more and more grains and seeds; I must have missed this or I would have certainly included the dish I made last week and one I know you would love…very Tex Mexish! Red Quinoa with Chipotle, Roasted Corn and Avocado. It is so good I think we fought over the last bite. :)

I read the attached article a little while ago and thought about you, since I was reading a post on your blog one day and somebody called you the Quinoa queen. I love to eat Quinoa, but this article here made me think. I thought you might would be interested in it, too.
