How do you participate in the Wake Up Breakfast with California Avocados Link-Up? It’s easy. I promise.

1) Get busy cooking breakfast with California avocados and post your recipe on your blog. You can enter up to 3 recipes. It is fine to use recipes that are previously posted on your blog, as long as you add the info in 3) and 4).

If you don’t have a blog, that’s okay. Just leave your recipe in the comments section of the post on Dine & Dish or Cookin’ Canuck. YOU MUST RECORD YOUR ENTRIES IN THE RAFFLECOPTER WIDGET TO BE ELIGIBLE TO WIN!

I am such a slacker. Avocado and me for breakfast? Here’s my recipe. Slice one avocado. Put as many slices as will fit on top of an egg. Salt. Devour. :)

Diced avocados, tomatoes, spinach, green onion, and anything else you would like top add to scrambled eggs or an omelet.

Another great breakfast tip add avocado to your smoothie use instead of yogurt or cottage cheese.

My recipe is for an avocado breakfast smoothie.
1 avocado
6oz greek yogurt (plain or flavored)
1 banana
1/2 cup favorite berries
1/2 cup grape, pomegranate or cherry juice
a couple of ice cubes

Blend and enjoy.

Another avocado breakfast recipe is my California Scramble.

4 eggs
4 turkey breakfast sausage links, cooked thoroughly, each sliced into 4-5 pieces
1/2 cup avocado
1 T skim milk
salt, pepper and butter

Butter pan. Beat eggs thoroughly with milk. Cook eggs over med-high heat, stirring occasionally until desired consistency. Season to taste. Divide eggs onto 2 plates. Serve with half the sausage and egg over each. Enjoy.

My final avocado breakfast recipe is Grits topped with Avocado. Save yourself some time and make instant grits. Top with 1 oz of shredded cheddar per serving. Season to taste (I like a little butter, salt and pepper.) Slice avocado. Serve grits with a couple slices on top.

I LOVE avocado’s, especially California Avocado’s! Cant get more fresh than that! Last night I made avocado dip for my hubby and I, and used whole wheat wraps and lime chips to dip it in.
On the bottom I put a layer of smashed avocados.
The next layer, refried beans with cajun spices.
The next layer, lettuce.
The next layer, diced tomatoes.
The next layer, reduced fat sour cream
Lastly, shredded cheese and Sriracha on top!
It was absolutely delicious!! mmm thanks for the giveaway Cookin Canuck and california avocados! !!

1/2 sweet white onion, minced
2 ripe, red tomatoes, diced
2 Serrano chiles, stemmed, seeded and minced
1 Tbsp. minced fresh mint, cilantro or basil
1 ripe, Fresh California Avocado, peeled, seeded and diced
½ cup fresh blueberries (I used strawberries instead)
¼ tsp. sea salt

Lastly, something I could eat for breakfast with avocados is my absolute FAVORITE! Everyone has to try it, its awesome!
Cook one package of Jimmy dean sausage. Cut in small pieces.
Make scrambled eggs and cut in small pieces.
Cook 4 strips of bacon, and cut in small pieces.
Dice 1 California Avocado.
Use one bag of hashbrowns and once cooked, add all above ingredients.
Add half a jar of salsa, and shredded cheese.
Make sure cheese is melted and serve!

awesome recipe that I make for breakfast a lot for my hubby and I!!

California Avocado Toast with Fried Egg
Toast 1 slice bread and spread with 1/2 ripe, Fresh California Avocado (mashed or sliced). Spray a small nonstick skillet with cooking spray and fry one egg as desired.
Place cooked egg onto avocado toast, sprinkle with salt and pepper if desired.

¼ cup granola
¼ cup (2 oz. or 2/5th) ripe, Fresh California Avocado, peeled, pitted and mashed
¾ cup vanilla Greek low-fat yogurt
¼ cup fresh Natureripe® blueberries
ASSEMBLE IN ORDER LISTED
Havent tried this yet, but will be making it tomorrow morning. Looks awesome!! Love California Avocados!!

MY FAVORITE- ANYTIME OMELET
Ingredients
3 eggs, lightly beaten
3 Tbsp. low fat milk
Nonstick cooking spray
½ cup shredded Cheddar cheese
1 Tbsp. sliced green onion
¼ cup chopped red bell pepper
1 ripe, Fresh California Avocado, seeded peeled and cubed

Spanish Tortilla for Two with Creamy Avocado Sauce

Ingredients
For the Tortilla
1 tablespoon olive oil
1/4 cup diced poblano pepper
1/4 cup diced onion
1 russett potato, grated
3 large eggs
1 tablespoon water
1/4 teaspoon ground turmeric
5 grape tomatoes sliced in half
1/4 cup chopped Spanish green olives (can use black olives if prefer)
1/4 teaspoon salt
pepper to taste
1/2 cup grated sharp cheddar cheese

For the Avocado Sauce
1/2 avocado
1 tablespoon lemon juice
2 tablespoons water
2 tablespoon Greek yogurt
salt to taste
dash of green pepper sauce

Tortilla directions
Heat a 7-inch cast-iron or nonstick oven proof skillet over medium heat. Add the olive oil and turn the heat down to medium. Add the onion and poblano pepper and saute until translucent, about 3 minutes. Add the grated potato. Cook, occasionally stirring until the onion, poblano pepper and potato are slightly browned, 5 to 8 minutes.

In a large bowl gently whisk the eggs, water, turmeric, salt and pepper. To the egg mixture add grape tomatoes and olives. Stir to blend. Add the egg mixture to the potatoes in the skillet. Cook the eggs until they are set on the side but the top is still loose, about 5 minutes. Sprinkle the grated cheese on top. Place the pan under the broiler for 2 minutes. The tortilla will turn slightly golden and puff up before it settles.

Cut into quarter wedges and top with avocado sauce. Serve immediately.

Avocado sauce directions
You can make the avocado sauce while the tortilla is cooking. Slice the avocado in half and remove the pit. Scoop the flesh into a food processor and add the yogurt, lemon juice, water, Greek yogurt, salt and pepper. Blend until smooth. Taste to see if needs more salt. Cover and refrigerate until ready to serve.
