It’s summer barbecue time and all I can think is, “Does that mean I have to stand outside in the blazing heat?” and “Will anyone notice if I make a beeline for the air-conditioning?” Seriously, I am the biggest wimp when it comes to anything above 90 degrees F.

I’m Canadian. What do you expect?! And now that I think of it, what the heck is a Canadian doing living in the desert temperatures of Utah? This is the conversation that I have with myself every single summer. What a killjoy!

But then I remember that summertime heat brings good things…corn, watermelon, fresh berries, avocados…and copious amounts of Fresh Strawberry & Lime Tom Collins cocktails and popsicles. It’s all good.

Once I get over the fact that it’s hot enough to boil a monkey bum (thank you for that, Monty Python), I start thinking about my favorite barbecue side dish recipes. Each of these deserves a prime spot on the potluck table…easy, tasty and healthy.
