You can't beat a really good summer salad recipe and these are some of my favorites. Side dishes, entrees and potluck dishes - there's a little bit of everything.
As I see it, there are only a few options for summertime cooking when the temperature rises. Grilling, slow cooker meals and salads. Lots and lots of salads. It's a good thing that my family actually enjoy dinner salads, otherwise I'd be getting the death stare for at least half of our summertime dinners. As long as mushrooms aren't involved, they're game, which highly reinforces my dinner prep laziness when the hot weather hits.
I pulled together 15 of my favorite summertime salad recipes. While they're not all entree salads, most of them can be served with a simple entree, such as grilled chicken kabobs or shrimp skewers for a quick dinner. There's a little bit of everything here: quinoa, pasta, grilled veggies and so on.
