It’s time to put your summertime tomato bounty to good use. These healthy tomato recipes will have you wishing that summer lasted all year long!
The first year we planted tomatoes in our garden, we were in for a surprise. The raised bed was dotted with cherry, Roma and zebra tomato plants, tucked in between more zucchini plants than one family can handle. We spent July and the first part of August watching the flowers turn to green fruit, and then slowing ripening in the hot summer sun. Finally it was time to harvest the first batch of tomatoes, so I supplied my youngest son (T) with a bowl and sent him out to the garden.
Fifteen minutes or so passed and I wondered what the heck was taking him so long. I called to him and, a minute later, T rounded the corner with the bowl half full and his face covered in tomato juices and seeds. “They’re really, really good, Mum!” he exclaimed, with a silly grin plastered to his face.
We knew the kid liked tomatoes, but had no idea that he was going to eat them like I eat Brie cheese. Fast and furious, with no willpower.
Now I send T out to the garden with strict instructions: Fill the bowl first, then you can eat the extras. It’s a good problem to have.
