There's nothing like a list of scrumptious chicken breast recipes to get you excited about healthy cooking! For awhile, I completely avoided boneless, skinless chicken breast recipes and opted for chicken thighs, pork, shrimp, salmon. Too many bad experiences with overcooked, dry chicken left me disillusioned with the lean protein. But dry and overcooked doesn't need to be the name of the game! And these easy chicken breast dinner ideas prove that.
One of my favorite meal prep tricks is to poach chicken breasts on Sunday, shred the meat and keep it on hand either in the fridge or freezer for quick and easy meals. For example, my Thai Chicken Salad comes together in just 15 minutes!
The key to tender, juicy chicken breasts? Well, it's as simple as not overcooking them. But then that begs the question...
How do you know when chicken is done?
- The internal temperature of chicken should be 165 degrees F. For chicken breasts or thighs, insert the thermometer into the thickest part of the meat. If there is a bone, be sure that the thermometer isn't touching it, otherwise you'll get an incorrect reading.
- When you poke chicken, the juices should be clear. If they're still light pink, cook the chicken longer.
- What about cutting into the chicken? Yes, this is an option and is one of the easiest ways to see if the chicken is cooked through. However, cutting into the chicken releases a lot of the juices. Particularly with chicken breasts, you want to retain as many of those juices as possible!
- Shrinkage! Chicken can often looked down on the outside - perfect grill marks, browned crust - but can still be undercooked. When meat cooks, it starts to shrink. If the piece of chicken is still the same size as when you starting cooking it, more cooking time is likely necessary.
I never want you to serve underdone chicken, but take care to avoid cooking it those extra few minutes, when the meat turns from juicy to dry.
