Greek Grilled Shrimp Kabobs with Tomatoes Recipe
If I could choose only one grilled item all summer long, shrimp kabobs would be it. First of all, I've been a shellfish fan all of my life. Just ask my parents, who shelled out (pun intended) for copious helpings of shrimp cocktails on our family vacations down the Oregon coast. And the Dungeness crab we cooked in the hotel room kitchen...there was nothing better in my 9-year old mind (still holds true today). But I digress.
Back to shrimp skewers. If you cook the shrimp on a hot grill until they're barely cooked through and succulently tender, they barely need more than olive oil, salt and pepper. That being said, you can never go wrong with some herbs and a squeeze of lemon, a light brush of teriyaki sauce or a spice rub.
How to make grilled shrimp kabobs:
- When making shrimp kabobs on the grill, you can use either thin metal skewers or wooden skewers. If using wooden skewers, soak them in warm water for 30 minutes before using to stop the skewers from burning too badly on the grill. If using metal skewers, use two skewers per kabob to stop the shrimp from spinning around as you attempt to flip them (that can be maddening!)
- MY NUMBER ONE TIP: Do not overcook the shrimp! I sound like a broken record because I mention this every single time I post a new shrimp recipe. But it's the one thing that can truly make or break your shrimp dish. Overcooked = rubbery shrimp. That's a no-go in my shrimp-loving world.
- Pat the shrimp dry in paper towel to blot off any excess water. Then toss with olive oil, salt and pepper. Getting rid of excess moisture will help the shrimp to sear rather than steam. Searing will give you tasty little charred bits, which is always a good thing.
- In this recipe, I threaded cherry tomatoes and thin pieces of red onion onto the shrimp skewers because they cook as quickly as the shrimp. Pineapple would also be a great option.
- Serve the kabobs with a bowl of Roasted Pepper Feta Yogurt Sauce (seen in the photos), Avocado Tzatziki or Roasted Tomatillo Salsa Verde.

Greek Grilled Shrimp Kabobs with Tomatoes
Ingredients
- 1 ½ pound raw large shrimp peeled & deveined, tail intact
- 1 tablespoon + 1 teaspoon olive oil divided
- 1 teaspoon dried oregano
- ½ teaspoon + ⅛ teaspoon kosher salt divided
- ½ teaspoon ground pepper
- 18 cherry tomatoes
- ½ red onion rings cut in thirds
- ½ lemon
- 1 tablespoon minced flat-leaf parsley
Instructions
- If using wooden skewers, soak them in warm water for at least 30 minutes.
- Preheat the grill to medium heat. Lightly brush the grates with oil.
- Place the shrimp in a large bowl and toss with 1 tablespoon olive oil, oregano, ½ teaspoon salt and pepper.
- In a separate bowl, toss the cherry tomatoes and onion pieces with the remaining 1 teaspoon olive oil and â…› teaspoon salt.
- Thread the shrimp onto the skewers, alternating with the tomatoes and onion pieces.
- Grill until the shrimp are just cooked through and the tomatoes are starting to split, about 2 minutes per side. Squeeze the lemon over top and garnish with parsley.
- Serve with Roasted Pepper Feta Yogurt Sauce.
