Light weeknight dinners balance out holiday meals this week, with plenty of delicious options to keep your family and guests happy. Week 32 of this Healthy Meal Plan includes both meat and meatless recipes.
The year is ticking away and this coming week is filled with family get-togethers and New Year’s Eve celebrations with friends. This week’s healthy meal plan is a little out of the norm. Monday is devoted to our Christmas feast and Sunday is all about ringing in the new year (cranberry prosecco cocktails, anyone?).
Everything day in between is filled with healthy weeknight dinner recipes to keep things light so that Christmas and New Year’s Eve can be thoroughly enjoyed, guilt free!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.
Healthy Meal Plan {Week 32}
- MONDAY: Christmas dinner!!! For us, that’s a meal very similar to Thanksgiving. Here is what’s on our menu:

Shredded Brussels Sprouts with Pistachios, Cranberries & Parmesan

Mashed Sweet Potatoes with Blue Cheese Breadcrumbs
