Feeling the need for some dinnertime inspiration for quick and healthy weeknight meals once in awhile? Week 37 of this Healthy Meal Plan includes both meat and meatless recipes.

I have to be honest…I’m not quite ready to meal plan for this coming week because my mind is stuck on healthy Super Bowl recipes for tomorrow’s big game. Even though that I am a sports fan, let’s get real – the game is a great excuse to dive into all of my favorite finger foods and our go-to Slow Cooker Hoisin Chicken.

But once game day is over, it’s back to the reality of putting dinner on the table each night. This week I’m pulling out the taco recipe that makes me fall in love with tacos all over again each time I make it. Throw in some stuffed peppers and a vegetarian crustless quiche, and dinnertime this week is starting to look up!

Let’s get started with this week’s healthy meal plan…

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.

Healthy Meal Plan {Week 37}

  • Monday: Teriyaki Shrimp Tacos with Chili Lime Yogurt
  • Tuesday: Sweet Potato Toast with Tahini Arugula – For more protein, layer cooked chicken on top.
  • Wednesday: Italian Chicken & Vegetable Tortellini Soup with spinach salad
  • Thursday: Greek Stuffed Peppers with Feta Cheese + green salad
  • Friday: Dinner out
  • Saturday Asparagus & Feta Cheese Crustless Quiche with spinach salad
  • Sunday: Easy Braised Balsamic & Herb Chicken, served over brown rice, cauliflower rice or quinoa
