After the craziness of last week, this week was a sea of calm in comparison. We’re into the regular swing of baseball games and school work, my older son is getting used to his boot and crutches (change of diagnosis – a bad sprain and torn ligaments instead of a break!) and, as a bonus, spring made an appearance in the Pacific Northwest.
With at least four days of sun under our belts in the last week and the temperatures reaching the 80s, I developed a hankering for summer salads and anything that we can char on the grill. I’m getting into that summer entertaining kind of mood, my friends, and I can’t wait to share more backyard barbecue and picnic recipes with you over the next couple of months!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.

- Monday: Instant Pot Black Beans with Fresh Avocado Salsa {Vegan}
- Tuesday: One-Pot Cumin & Smoked Paprika Chicken with Potatoes, served with steamed broccoli
- Wednesday: Whole Wheat Pasta Salad with Salmon, Tomatoes & Herb Dressing
- Thursday: Pesto Chicken Stuffed Spaghetti Squash
- Friday: Dinner out
- Saturday Grilled Marinated Tri-Tip with Red Pepper Cilantro Pesto with Cantaloupe Goat Cheese Salad
- Sunday: Black Bean Sliders with Creamy Avocado Sauce with a green salad
