It’s time to do some planning for next week’s meals, and Week 54 of this Healthy Meal Plan includes plenty of dinner ideas, including both meat and meatless recipes.
The last week of school is here and I can’t believe there are going to be TWO high schoolers in the house next year. Ack! After a year of tough classes, sports and music obligations and early morning classes and rehearsals, the boys are beyond ready for summertime. No more 5:30am wake-ups, late nights of studying and packing school lunches for a couple of months. Hallelujah!
Our minds are turning to grilling recipes, backyard entertaining, picnics and summer vacations. We are so ready! Farmer’s markets are overflowing with fresh fruits and vegetables, and we’re loading up on as much fresh produce as possible to serve up for weeknight meals and barbecues with friends. Watch out for more grilling recipes in the coming weeks.

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.

- Monday: 30-Minute Rice Noodle Soup with Mushrooms & Kale
- Tuesday: Chicken Fajitas Cauliflower Rice Bowls
- Wednesday: Lemon Butter Grilled Shrimp with Easy Cilantro Lime Brown Rice & grilled vegetables
- Thursday: Vegetarian Enchilada Stuffed Spaghetti Squash
- Friday: Dinner out
- Saturday Grilled BBQ Chicken Pizza with Avocado, served with Balsamic Grilled Vegetables
- Sunday: Easy Grilled Pesto Salmon in Foil with Warm Kale Salad with Caramelized Onions & Mushrooms
