Summer grilling, weeknight cooking and entertaining – there’s a little bit of everything in Week 55 of this Healthy Meal Plan.
The calendar has officially flipped to summer, the days are gloriously long and the kids are elated to be out of school. It’s been a year with A LOT of studying and other activities, and we’re all ready for a bit of a break from the regular schedule. Our oldest son is going to be in grade 11 next year and the younger one is starting high school, and my husband and I are acutely aware that we only have a couple of summer before the college years start. Bittersweet.
We’re ready to dive into summer feet first, with trips to the beach, an exciting family vacation in July (London and Prague, here we come!) and plenty of lazy summer evenings on our patio. That means you’ll see more and more grilling and summer-inspired recipes showing up here!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.
Healthy Meal Plan {Week 55}
- Monday: Kale, Mushroom & Sun-Dried Tomato Lasagna Rolls
- Tuesday: Instant Pot Sausage Cabbage Bowl with Quinoa, served with Strawberry & Kale Salad
- Wednesday: Grilled Vegetable Wrap with Hummus, served with watermelon slices
- Thursday: Shrimp Scampi Spaghetti Squash
- Friday: Dinner out
- Saturday Grilled (or Broiled) Spice Rubbed Chicken with Grilled Eggplant & Zucchini Salad with Feta, Chickpeas & Mint
- Sunday: The Ultimate Summer Salad with Dill Buttermilk Dressing, served with grilled chicken, shrimp or portobello mushrooms
