It’s time to do some planning for next week’s meals, and Week 59 of this Healthy Meal Plan includes plenty of dinner ideas, including both meat and meatless recipes.
We’re in that mid-season limbo between the stinkin’ hot days of summer and the cool blissful days of fall, and I couldn’t be happier. My energy level is higher and I actually feel like cooking again. On 95 degree days (with no air conditioning in Pacific Northwest houses!), cooking is the last thing on my mind. But now that we’re in the 70s and 80s, I’m wielding spatulas and wooden spoons with gusto.
The boys are still out of school, but things seem to be busy as ever (in a good way!) So, I’ve been relying on my list of Healthy School Night Recipes and on recipes from my new post, 10 Quick & Healthy Breakfast Ideas. Lots of recipes to keep you and your family well fed and happy for weeks to come!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.
Healthy Meal Plan {Week 59}
- Monday: Chinese Beef & Broccoli Stir-Fry with brown rice
- Tuesday: Zucchini, Onion & Feta Cheese Omelet with whole wheat toast
- Wednesday: Stuffed Endive Spears with Teriyaki Turkey, Edamame & Baby Corn
- Thursday: Chimichurri Cucumber Noodles with Shrimp, Avocado & Hearts of Palm
- Friday: Dinner out
- Saturday Grilled Chicken Kabobs with Red Pepper Cilantro Pesto with Baked Tomatoes with Parmesan & Herbs
- Sunday: Spiced Mushroom, Chickpea & Tomato Stew {Vegan} with a green salad
