Fall is here and I’m pulling out some of my favorite cooler weather recipes in Week 63 of this Healthy Meal Plan. As usual, both meat and meatless recipes are included.
September is birthday and anniversary month around here. Three birthdays – my husband, our older son and my dad – and our anniversary (19 years!) That means plenty of special dinners, including a pizza party for my son and 12 of his closest teenaged friends. Bags of dough from Trader Joe’s (I couldn’t go homemade for that many pizzas without compromising my sanity) and a ton of toppings for both vegetarians and meat lovers, including my son’s favorite Thai Chicken Pizza. And easy way to feed a boatload of hungry kids!
With the cooler weather rolling in, I find myself drawn to making soups again. As much as I adore soup for dinner, I just couldn’t bring myself to eat anything that emitted steam during the hottest days of summer. But I am back on the comfort food train, as you’ll see in this week’s menu.

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.

- Monday: Greek Stuffed Peppers with Feta Cheese with a green salad
- Tuesday: Hearty Lentil Black Bean Soup with Broccoli Salad with Dijon Vinaigrette
- Wednesday: Chicken Pesto Artichoke Naan Pizza with a kale salad
- Thursday: Thai Noodle Soup with Shrimp & Cabbage
- Friday: Dinner out
- Saturday Grilled Italian Panini with Zucchini, Summer Squash & Basil
- Sunday: Roasted Chicken with Deep Onion-Garlic Gravy with Light Mashed Potatoes with Kale & Goat Cheese with Green Beans with Lemon & Toasted Almonds
