It’s time to do some planning for next week’s meals, and Week 66 of this Healthy Meal Plan includes plenty of meat and meatless dinner ideas.
How is it November already?! While we’re still snacking on pumpkin seeds and doing our best not to eat the kids’ Halloween candy (those Almond Joys get me every time), my mind is fully ready for the upcoming holidays. I’m dusting off the roasting pan for our favorite turkey recipe, stocking up on cranberries for cocktails and sauce, and dreaming of THE BEST turkey corn chowder that I’m going to make with all of those leftovers.
In the meantime, we’re still making regular weeknight meals around here and that’s what this week’s meal plan is all about!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.
Healthy Meal Plan {Week 66}
- Monday: Instant Pot Taco Soup with Potatoes served with a green salad
- Tuesday: Southwestern Stuffed Portobello Mushrooms {Vegetarian} served with steamed broccoli
- Wednesday: Turkey Panini with Apple, Cheddar & Arugula, served with carrot and celery sticks, and red bell pepper strips
- Thursday: Whole Wheat Orzo, Cauliflower & Kale Soup {Vegan}, served with a spinach salad
- Friday: Dinner out
- Saturday Sweet Potato Bison Shepherd’s Pie served with Green Beans with Lemons & Toasted Almonds
- Sunday: Roasted Curry Shrimp & Zucchini Sheet Pan meal served with Coconut Ginger Mashed Sweet Potatoes
