The fridge is full of leftovers – turkey, mashed potatoes and stuffing – and it’s time to whip up some of my best Thanksgiving leftover recipes.
Thanksgiving in the United States is only a day away, and my family and I can’t wait to dig into some of our favorite holiday recipes. We’re heading to our friends’ house for a feast, and they are going to be cooking our favorite Roasted Turkey with Herb Butter & Roasted Shallots, mashed potatoes and desserts, while I whip up my dad’s famous stuffing, the best gravy ever, my mother-in-law’s crockpot applesauce and some homemade cranberry sauce.
But when all is said and done, and Friday rolls around, all I can think of is leftovers. I’m that person who can’t stop picking at the stuffing every time I pass by the fridge! From soups to sandwiches, I’ve pulled together my favorite recipes using Thanksgiving leftovers.

This Light Turkey and Corn Chowder is one of our favorites at any time of year. If we don’t have leftover turkey in the fridge, I use chicken instead. Either way, it’s rich in flavor, but low in calories. A win-win!

#5 Lunchtime Quesadilla with Turkey, Apples, Havarti Cheese & Arugula
It just doesn’t get any easier than these Quesadillas with Smoked Turkey, Apples, Havarti Cheese & Arugula. The recipe calls for turkey lunch meat, but you can easily substitute sliced roasted turkey. In fact, I made this for dinner last night with some leftover rotisserie chicken.
