When we’re running from the pool to a soccer game, then back to the pool in the middle of summer (with a little work tucked in between), all we want is something light, quick and easy for dinner. Braising and baking get pushed aside for grilling and searing. Here are four new recipes that we’ve slipped right into our summertime menu. They’re here to stay.
These are recipes that I wrote for allParenting magazine, so the links will take you over to the recipes and additional photos on that site.
These Spicy Shrimp & Tomato Kebabs take just minutes to put together. Rub the shrimp with a simple spice mixture, thread them on skewers alongside cherry tomatoes and grill for a few minutes. You could serve them over rice as a main course, or take the shrimp and tomatoes off of the skewers for an hors d’oeuvres table.
There is nothing easier than a grilled sandwich. This vegetarian version combines grilled zucchini and summer squash with store-bought basil pesto and feta cheese. Keep this recipe tucked for Grilled Summer Vegetable Panini for the inevitable zucchini bounty.
Hearty Breakfast & Light Lunch
