When I featured the first Skinnytaste cookbook (the Chinese Beef & Broccoli Stir-Fry is still one of our favorites), I mentioned that Gina is just as she seems on her blog. Sweet, talented, humble, smart and kind. I've since spent more time with her at the recent Fresh Coast Retreat and can tell you that this lady is a gem! And her recipes are not only healthy, but are always full of flavor.

Let's move on to the slow cooker adobo chicken recipe. This is one of those recipes where you can throw everything in the crockpot and just walk away. No sautéing beforehand and almost no chopping required. If you can find skinless drumsticks, that will save you even more time. If not, the skin is easily removed with a sharp knife and a little tugging.
The chicken is cooked in a soy sauce-based marinade (use tamari for gluten free), either on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours. By the time it's done cooking, the chicken is so tender that it's practically falling off the bone. The marinade is a fantastic combination of soy sauce, Sriracha, ginger and garlic, and just begs to be spooned over a helping of brown rice once the chicken is cooked.
Serve it alongside brown rice or quinoa and a side of stir-fried or steamed veggies. And then head to your computer or the nearest bookstore to buy this book!

Slow Cooker Adobo Chicken {Skinnytaste: Fast and Slow Cookbook}
Ingredients
- ¼ cup reduced sodium soy sauce or tamari for gluten free
- 3 tablespoons red wine vinegar
- 1 tablespoon sriracha
- 1 tablespoon dark brown sugar or agave nectar or honey
- 8 garlic cloves crushed
- 1 tablespoon grated fresh ginger
- freshly ground black pepper
- 8 1 ¾ pounds total skinless chicken drumsticks
- 6 bay leaves
- 1 scallion chopped, for garnish
Instructions
- In a medium bowl, combine the soy sauce, vinegar, Sriracha, brown sugar (or agave/honey), garlic, ginger and pepper to taste.
- Arrange the chicken in an even layer in the bottom of a slow cooker. Add the bay leave and pour the sauce over the chicken.
- Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours, until the chicken is cooked through and falling off the bone. Discard the bay leaves. Serve garnished with scallions.
