You don’t need to do much to shrimp to make it taste good. It doesn’t mind being fancied up, but I like to think that it’s pretty happy bathing in a simple sauce of olive oil, butter, lemon, and garlic. This meal is perfect for a weeknight meal when you’re trying to throw dinner together between soccer practice, dance class, and that interminably-proscratinated book report.
Cook the pasta according to the package direction, or until al dente. Drain.
My family and friends here in the good ol’ U.S. of A. like to tease me about my decidedly Canadian pronunciation of pasta. I say pasta (“a” sound as in the word cat, not “ah”). You people can tease all you want, but you’ll never be able to pummel the Canadian out of me. I’m also going to keep saying “garburator” (that’s a garbage disposal to you Yanks) and “ghost car” (that’s an undercover police car) just to annoy you.
Prepare all over the ingredients before starting to cook the shrimp because this moves pretty quickly. Peel and devein 1 lb of large shrimp (prawns).
Mince 4 cloves (about 1 1/2 tbsp) garlic.
Zest 1/2 small lemon.
Juice 1 1/2 – 2 lemons until you have 1/4 cup lemon juice.
Can you tell I hadn’t moisturized my hands in awhile? I’m aiming for the reptilian look.
Slice 1/4 lemon into half-moons.
Chop Italian (flat-leaf) parsley until you have 1/3 cup chopped parsley.
Now you’re ready to go. Place a large pan over medium-low heat, and add 3 tbsp unsalted butter and 3 tbsp extra-virgin olive oil.
Add the garlic and saute for 30 seconds to 1 minute. Don’t burn the garlic or your dish will become bitter. If you burn it, throw out the mixture and start again. Seriously.
Add the shrimp, 1 1/2 tsp kosher salt, and 1/4 tsp freshly ground black pepper. Cook, stirring, until the shrimp is just pink, 4-5 minutes.
Remove from the heat and add the parsley, lemon juice, lemon zest, and lemon slices.
Add the cooked pasta.
Toss the pasta with the sauce. Be sure to taste the pasta at this point. If it is too lemony for you, add some olive oil until it is to your liking. Serve immediately.
