This soup checks all the boxes – easy, healthy and full flavor.But it's not your standardwhite bean soup. I shook things up by adding some warm spices, such as curry powder and coriander.
Sauté the aromatics

Start by sautéing onion, carrots, celery, garlic and ginger with the spices in a little olive oil.
Simmer

Add the broth, petite diced tomatoes and half of the beans (mash them for texture), then simmer. Stir in some coconut milk.
Finish it off!

Add the rest of the beans. Stir in fresh spinach leaves. Kale or chard are also good options. Don't forget the lime juice!
