PLACE THE QUINOA IN A  SIEVE AND RINSE IT UNDER COLD WATER.

SautÉ THE MUSHROOMS in a nonstick skillet until golden brown and tender.

COOK THE QUINOA WIth garlic, ginger and broth. stir in the mushrooms.

MAKE-AHEAD

Store in the fridge in an airtight container for up to 3 days. Reheat in the microwave or on the stovetop.
