Toast the pearl couscous in olive oil. Add water, bring to a boil. Reduce heat, cover and simmer until all of the liquid is absorbed.
Heat a large nonstick skillet over medium-high heat. Add the sausage. Cook, stirring occasionally, until the sausage is browned. Transfer to a bowl and set aside.
Sauté garlic in a skillet. Add the white wine & red pepper flakes. Cook at a rapid simmer for 1 to 2 minutes.
Stir in the cooked sausage & Israeli couscous. Add the spinach, feta cheese, olives and parsley. Season to taste & serve.
