Light Chicken & Potato Soup

A huge hit with my family! This light version of chicken potato soup, made without heavy cream, is a great way to warm up on a chilly day.

Cook the chicken

Sauté chicken breast pieces in  a large saucepan.

Cook the vegetables

Sauté onion, celery, carrot and red bell pepper with olive  oil.

Add & simmer

Add diced potato, garlic, spices and broth. Simmer for about 10 minutes.

Thicken the soup

Stir in a slurry of nonfat milk and flour. Simmer until the soup thickens.

Finish it off

Stir in Cheddar cheese, cooked chicken and green onion. Adjust seasonings & serve!
