Rice noodles Cucumber Edamame Bell pepper Carrot Green onions Peanut butter Soy sauce Lime juice Maple syrup Rice vinegar Chili garlic sauce

Cook the noodles in boiling water. Add the edamame in the last minute.

Chop and slice the red bell pepper, carrots, cucumber and green onions.

Cool and drain the noodles. Add the chopped vegetables. Toss to combine.

In a small bowl, whisk together the sauce ingredients. Add a few tablespoons of water and whisk until smooth.

Toss the noodles and vegetables with the dressing. Serve right away or chill first.
