Quick Pickled Red Onions
Thinly slice the red onion.
Simmer fruit juices, vinegar & water.
Pour the liquid over the onions.
Cool, then store in the fridge.

Add the chicken broth and simmer. Stir in the orzo and cook until tender, stirring frequently.
Chicken & peas
Stir in the shredded chicken and frozen peas. Cook to heat for a couple of minutes. Season, stir in parsley & serve.
