Sautéed Cauliflower Rice with Caramelized Onions
What you need...
Olive oil Yellow onions Balsamic vinegar Dried thyme Garlic Cauliflower rice Spinach Feta cheese Parsley Salt & pepper
Cook onions in olive oil until start to soften & brown.
Add balsamic vinegar & thyme. Cook until deep golden brown.
Cook cauliflower rice until softened, then add spinach.
Add feta & parsley. Season to taste.
Serve as a side dish for almost any meal.
Use in place of rice or pasta. Ladle tomato sauce, curry or other sauce over top.
Stir in chicken, shrimp or chickpeas.
