Shrimp in Red Sauce
Ingredients
▪️1 lb. peeled large shrimp ▪️1 tsp olive oil ▪️3/4 tsp kosher salt, divided ▪️1/2 tsp ground pepper, divided ▪️1/2 small yellow onion ▪️4 garlic cloves ▪️1 tsp dried oregano ▪️1/8 to 1/4 tsp red pepper flakes ▪️1 (28 oz.) can good-quality crushed tomatoes ▪️2 tbsp minced parsley

Toss the shrimp with olive oil, salt and pepper.

Sear the shrimp over medium-high heat.

Make the easy tomato sauce according to recipe directions.

Stir in the cooked shrimp and parsley.
Serve with pasta, rice, quinoa, cauliflower rice, zucchini noodles or spaghetti squash.
