Southwest Quinoa Salad

This easy salad features nutty quinoa, black beans, corn, and a zesty lime juice dressing.

PLACE THE QUINOA IN A  SIEVE AND RINSE IT UNDER COLD WATER.

COOK THE QUINOA. THEN SPREAD OUT ON A BAKING SHEET TO COOL to room temperature.

COmbine the quinoa with black beans, corn and cilantro.

FOR the dressing, whisk together lime juice, agave nectar, cumin, chipotle pepper, olive oil and salt.

MAKE-AHEAD

Store in the fridge in an airtight container for up to 4 to 5 days. Serve it as a side dish with dinner or use it as a meal prep lunch.
