Serve it with a green salad -and cornbread if feeling ambitious.
Sauté the aromatics
Start by sautéing the onion, bell pepper & carrot.
Add spices, garlic and tomato paste.
Add the lentils, broth and crushed tomatoes. Bring to a boil, then simmer until the lentils are tender.
Finish it off!
Stir in the black beans and cook for another 5 minutes. Stir in some cilantro and adjust the seasonings to taste.
