What you need...

Spring roll wrappers Green leaf lettuce Red cabbage Cucumber Carrot Avocado Red bell pepper Peanut butter Lime juice Soy sauce Agave nectar Rice vinegar

Soak rice paper wrapper. Layer veggies in center.

Fold in the sides of the wrapper.

Roll up tightly. Cover with damp towel.

Whisk together peanut sauce ingredients.

Switch up veggies to suit your tastes. Other options: Napa cabbage, jicama, grated beets & sprouts.

SERVING IDEAS:

Add tofu for extra protein. For non-vegan option, add cooked shrimp or shredded chicken.

Place a damp kitchen towel or paper towel over the spring rolls while working on making the other rolls.

HOW TO STOP SPRING ROLLS FROM DRYING OUT

If serving later, place the spring rolls on a plate or serving dish, cover with a damp paper towel and wrap in plastic wrap.
