Vegetarian Stuffed Peppers

Why should meat lovers get to have all the fun?! These healthy Italian Vegetarian Stuffed Peppers are packed with all of the flavors of this classic dish. And they’re a breeze to make!

Ingredients

▪️1 tbsp olive oil ▪️1/2 yellow onion ▪️1 large carrot ▪️1/2 tsp kosher salt ▪️3 cloves garlic ▪️1 tsp Italian seasoning ▪️1/2 tsp red pepper flakes ▪️Crushed tomatoes ▪️1 can chickpeas ▪️Cooked quinoa ▪️3 red bell peppers ▪️1/3 cup grated mozzarella ▪️Grated Parmesan cheese

Start by sautéing the onion and carrots. Add the garlic. Season with salt, Italian seasoning and red pepper flakes. Your kitchen should be smelling amazing by now!

Stir in the crushed tomatoes, chickpeas and quinoa.

Spoon the filling into the pepper halves. Pour some water in the bottom. Cover and bake.

Melt the cheese over top. Serve!
