We all need some inspiration for quick and healthy weeknight meals once in awhile. Week 30 of this Healthy Meal Plan includes both meat and meatless recipes.
The school winter break starts in a week, and the thought of that is throwing me into holiday panic mode. Every year I swear that I’ll have all of my Christmas shopping done by December 1st, and every year I find myself praising the existence of Amazon Prime as I order a flurry of gifts the week before the big day. Someday…SOMEDAY…I will be one of those people who has all of their gifts wrapped the day before Christmas. I can dream, right?
At least I have my dinner planning game in order with this week’s healthy meal plan, including a hearty vegan soup and oft-requested stuffed peppers. At least my family will be fed!

Each week’s meal plan mirrors the way we eat at home – 90% healthy, with the occasional decadent meal thrown in. There will be a mixture of meat and meatless meals, with everything from slow cooker soups and dinner salads to one-pot dinners and breakfast for dinner recipes. A little bit of everything, which is exactly how we eat at our house.

Monday: Shrimp & Pork Wonton Soup with 5-Minute Stir-Fried Cabbage on the side
Tuesday: Make Ahead Baked Eggs with Zucchini & Gruyere with a kale pomegranate salad
Wednesday: BLT Naan Pizza with side salad
Thursday: Instant Pot Sausage Cabbage Bowl
Friday: Dinner out
Saturday Hearty Mushroom, Farro & Quinoa Soup
Sunday: Healthy Chili & Quinoa Stuffed Peppers
