With the chilly weather setting in, I’m diving into my recipe box for my best soup recipes. The list includes vegetarian and slow cooker options.
Let me tell you why “Don’t knock it ’til you try it” is my motto for soup recipes. In my early twenties, I traveled to Zimbabwe with my parents to visit family friends who lived there for several years. Working for the Canadian government in a foreign affairs role, our friends had a wonderful chef cooking their meals. One minute he could put together a meal for 20, and the next he could turn around and present a casual, flavorful meal.
Each day of our visit, I looked forward to lunchtime, when Chef whipped up the most amazing soups. Most of the soups were vegetable-based, pureeing together various steamed or sauteed vegetables, cleverly using up leftovers from the previous evening’s meal.
So, what does one do when the previous evening’s vegetable was Caesar salad?
Make soup, of course! That’s right, Chef threw the dressing-coated leaves of romaine into the blender, along with some broth, and hit “Puree”. The result? One of the best and surprising soups I’ve ever tasted.
None of the recipes below involve leftover salad, but they are some of my family’s favorite soup recipes. There’s a little something for everyone, from seafood to chicken to vegetarian.
Set that soup simmering on the stovetop, and curl up with a bowl of steaming soup by dinnertime. And don’t forget to serve the leftovers for lunch the next day.
