Thanksgiving in the United States is only a few weeks away (ack!) and I’m pulling out my best sweet potato recipes from the archives. Of course, sweet potatoes are not just meant for holidays. In fact, they can take the starring role in a vegetarian meal, as they do in one of my favorite lunches, Stuffed Sweet Potato with Spinach, Hummus & Feta, or in a show-stopping brunch dish, Sweet Potato Hash with Creamy California Avocado Sauce. Or whip up some Roasted Sweet Potatoes with Chinese Five-Spice Powder for an “anytime” side dish.
Not only do sweet potatoes taste great, they are a powerhouse of vitamins and minerals. They are chockfull of Vitamins B6, C and D, as well as iron, potassium and magnesium. And these sweet vegetables are versatile. They can be roasted, steam, mashed, baked or even grilled. You haven’t lived until you try grilled sweet potatoes!
