With Thanksgiving just around the corner and a craving for healthy eating, I’m diving into my recipe box for my best sweet potato recipes. The list includes side dishes and vegetarian entrees.
Thanksgiving in the United States is only a few weeks away (ack!) and I’m pulling out my best sweet potato recipes from the archives. Of course, sweet potatoes are not just meant for holidays. In fact, they can take the starring role in a vegetarian meal, as they do in one of my favorite lunches, Stuffed Sweet Potato with Spinach, Hummus & Feta, or in a show-stopping brunch dish, Sweet Potato Hash with Creamy California Avocado Sauce. Or whip up some Roasted Sweet Potatoes with Chinese Five-Spice Powder for an “anytime” side dish.
Not only do sweet potatoes taste great, they are a powerhouse of vitamins and minerals. They are chockfull of Vitamins B6, C and D, as well as iron, potassium and magnesium. And these sweet vegetables are versatile. They can be roasted, steam, mashed, baked or even grilled. You haven’t lived until you try grilled sweet potatoes!
Let’s get down to business.
But first, be sure that you don’t miss out on the new recipes posted this week, a Healthy Coffee Banana Smoothie that I made four times this week (it’s addicting!) and a quick and easy lunch recipes, 10-Minute Hummus & Greek Salad Naan (Flatbread).
