Preheat the oven to 375 degrees F. Place the baking rack on the middle setting.
Heat the olive oil in a medium nonstick skillet set over medium-high heat. Add the chopped onions. Cook, stirring occasionally, until the onions are soft and browned, 6 to 7 minutes.
Add the peppers and cook for 2 minutes.
Stir in the garlic, oregano, salt and pepper. Cook for 1 minute. Remove from heat.
Spread the pita chips in a single layer, overlapping slightly, on a baking sheet. Sprinkle the goat cheese over top. Bake until the cheese is warm and soft, 5 to 7 minutes. Take care not to burn the pita chips.
Remove the chips from the oven. Layer the cooked peppers and onions, tomatoes, cucumbers and olives over top.
Drizzle with the hummus dressing. Garnish with parsley. Serve.

In a medium bowl, whisk together the hummus, lemon juice, agave nectar, water, oregano and salt.
