Moroccan Chicken Quinoa Salad
The ultimate picnic or potluck salad! This Moroccan Chicken Quinoa Salad can be made ahead of time and serves up a ton of flavor in every bite.

Ingredients
The salad:

cooked quinoa
cooled

skinless cooked chicken breasts
chopped

chopped English cucumber
not peeled

large red bell pepper
diced

green onions
thinly sliced

slivered almonds
toasted

dried tart cherries

packed spinach leaves
The dressing:

fresh orange juice

fresh lemon juice

extra virgin olive oil

drizzle of agave nectar or honey

Instructions
The salad:
In a large bowl, stir together the quinoa, chicken, cucumber, bell pepper, green onions, almonds and cherries.
Stir in the dressing and toss to combine.
Stir in the spinach. Serve.
The dressing:
In a medium bowl, whisk together the orange juice, lemon juice, olive oil, cumin and salt. Taste and add agave nectar or honey, if desired.
