  • 1 teaspoon olive oil
  • 1/2 onion diced
  • 2 garlic cloves minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 cup brown rice
  • 2 cups water
  • juice of 1/2 lime
  • 1/4 cup minced cilantro

  • Heat the olive oil in a medium saucepan set over medium heat.
  • Add the onion and cook, stirring occasionally, until the onion is tender, about 5 minutes. Stir in the garlic, cumin and salt, and cook for 30 seconds.
  • Add the brown rice and stir to combine with the onion mixture.
  • Add the water and bring to a boil. Reduce the heat to low, cover and simmer until all of the water is absorbed, 45 to 55 minutes.
  • Fluff the rice, mix in the lime juice and cilantro, and serve.
