Tuck this Easy Cilantro Lime Brown Rice into burritos or serve it as a side dish. It's a fantastic whole grain and gluten-ree recipe that you'll make over and over again.
Heat the olive oil in a medium saucepan set over medium heat.
Add the onion and cook, stirring occasionally, until the onion is tender, about 5 minutes. Stir in the garlic, cumin and salt, and cook for 30 seconds.
Add the brown rice and stir to combine with the onion mixture.
Add the water and bring to a boil. Reduce the heat to low, cover and simmer until all of the water is absorbed, 45 to 55 minutes.
Fluff the rice, mix in the lime juice and cilantro, and serve.
