Greek Grilled Lamb Chops Recipe
These grilled lamb chops are simply prepared and topped with squeeze of lemon and a fresh salad of tomatoes, cucumbers and kalamata olives. This is an easy, healthy meal that is impressive enough to serve to guests.

Ingredients
The Lamb:

3 ounce each lamb chops (about 1 to 1 ½ inches thick)
½
teaspoon
kosher salt
½
teaspoon
freshly ground black pepper
½
teaspoon
dried oregano

lemon
The Salad:
1
cup
cherry tomatoes
halved
1
cup
chopped cucumber
¼
cup
kalamata olives
quartered
1
teaspoon
fresh lemon juice
1
teaspoon
extra-virgin olive oil
1
tablespoon
thinly sliced fresh mint
Instructions
The Lamb:
Preheat grill to medium-high heat.
Season both sides of the lamb chops with salt, pepper and oregano. Gently press the seasonings into the meat.
Place the lamb chops on the grill and cook until medium rare, about 4 minutes per side.
Place the lamb chops on a plate and squeeze the lemon over the chops.
The Salad:
In a medium bowl, stir together the tomatoes, cucumber, kalamata olives, lemon juice, olive oil and mint.
Place 2 lamb chops on each plate and top with the tomato salad. Serve.
