Vegan Avocado Toast with Hummus
Kick off your morning with a slice of this vegan avocado toast with hummus. Pickled onions add a fantastic pop of flavor!
Servings: 2 Servings
Toast the bread.
In a small bowl, mash the avocado with the back of a fork. Season with the salt.
Spread 1 tablespoon hummus on each slice of bread. Divide the mashed avocado between the two slices.
Top with pickled red onions and sprinkle with the sesame seasoning blend. Serve.

Note 1: I used Franz's Organic Rogue River 24 Grains & Seeds, which is 60 calories per slice.
Note 2: I used a Hass avocado, which tends to be a larger avocado (reflected in nutritional information).
Note 3: Trader Joe's Everything but the Bagel Seasoning blend is my favorite and can be found on Amazon if you don't have a Trader Joe's near you. It contains sesame seeds, sea salt, dried minced onion and garlic and poppy seeds.
