Arugula Strawberry Salad

The fresh flavors in this easy strawberry arugula salad taste like summer! Toasted almonds and creamy goat cheese add crunch and extra flavor.

Ingredients

  • 6 cups arugula
  • 10 basil leaves, chiffonaded (rolled and thinly sliced)
  • 1 ½ cups sliced strawberries
  • cup sliced almonds toasted in a dry skillet
  • 1 ¾ ounces soft goat cheese (chevre) crumbled

The dressing:

Instructions

  • Place the arugula and basil in a large serving bowl. Toss with the dressing until the leaves are coated.
  • Arrange the strawberries, toasted almonds and goat cheese on top of the arugula. Toss before serving. Serve.

The dressing:

  • In a small bowl, whisk together the balsamic vinegar, olive oil, agave nectar, salt and pepper until well combined.

Make ahead:

  • If making the salad ahead of time, toss together the arugula, basil, strawberries, almonds and goat cheese. Store separately from the dressing. Toss the salad with the dressing before serving.
