Strawberry Nice Cream
Strawberry nice cream is an easy, healthy summertime treat! It's made with fresh fruit and is a fantastic option for a plant-based and dairy-free dessert.

- 2 large ripe bananas
- 16 ounces frozen strawberries
- ⅔ cup unsweetened almond milk or other plant-based milk
- 1 teaspoon pure vanilla extract
- 2 teaspoons agave nectar (optional)*
Place the banana chunks and frozen strawberries in the bowl of a food processor. Pulse until the fruit is finely chopped.
Add the almond milk and vanilla extract. Puree until smooth, scraping down the sides with a spatula as necessary.
Taste the nice cream. If you prefer a sweeter flavor, add agave nectar, then blend again.
Serve immediately for a soft-serve consistency, or spread it evenly in a loaf pan and freeze for about an hour to make the mixture firmer.
If there are leftovers, cover and freeze for up to a week. The nice cream will become quite hard. Take it out of the freezer and let it thaw at room temperature until the desired consistency is achieved.
