Ingredients

  • 2 large ripe bananas
  • 16 ounces frozen strawberries
  • cup unsweetened almond milk or other plant-based milk
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons agave nectar (optional)*

Instructions

  • Place the banana chunks and frozen strawberries in the bowl of a food processor. Pulse until the fruit is finely chopped.
  • Add the almond milk and vanilla extract. Puree until smooth, scraping down the sides with a spatula as necessary.
  • Taste the nice cream. If you prefer a sweeter flavor, add agave nectar, then blend again.
  • Serve immediately for a soft-serve consistency, or spread it evenly in a loaf pan and freeze for about an hour to make the mixture firmer.
  • If there are leftovers, cover and freeze for up to a week. The nice cream will become quite hard. Take it out of the freezer and let it thaw at room temperature until the desired consistency is achieved.
