Smoked Turkey Quesadilla Recipe

- 4 whole wheat tortillas
- 8 teaspoons stone ground mustard
- 6 ounces sliced havarti cheese
- 6 ounces sliced smoked turkey breast
- 1 ½ Gala apples cored and thinly sliced
- 1 cup arugula
Heat a medium-sized skillet over medium-high heat. Lay 1 whole wheat tortilla in the pan, and spread 2 teaspoons of the mustard over the tortilla.
Top with ¼ of the cheese, turkey, apple and arugula.
Fold over the other side of the tortilla to form a half-circle. Press down with a spatula as the cheese melts to seal the quesadilla.
When the bottom is golden brown, flip the quesadilla and brown on the other side.
Remove from the pan, cut into thirds and serve.
Repeat with the remaining tortillas, mustard, cheese, turkey, apple & arugula.
