2large heirloom tomatoes, each cut into six ½ inch slices
3tablespooncrumbled blue cheese
Minced flat-leaf parsley,for garnish
Heat 1 teaspoon olive oil in a small nonstick skillet set over medium heat. Add the shallots and thyme, and saute until the shallots are tender and starting to brown, 2 to 3 minutes. Transfer to a small bowl.
To the shallots, add the remaining 1 tablespoon olive oil, balsamic vinegar and salt. Whisk to combine.
Arrange the tomatoes on a serving dish and drizzle the shallot mixture over the tomatoes.
